Sweet Potato Salad

4 large sweet potatoes, peeled and cut into

1-inch cube

2 teaspoons salt

1/2 cup mayonnaise

1/2 cup plain Greek yogurt

1/2 cup diced scallions (about 6)

1 red bell pepper, diced

2 Tablespoons minced fresh chives

1 to 2 teaspoons orange zest

2 teaspoons apple cider vinegar

1/2 teaspoon hot sauce

Salt and pepper



Place the potatoes in cold water in a large saucepan. Add salt and bring to a boil. Boil until just tender (5 to 6 minutes). Drain and set aside to cool (15-20 minutes).

Meanwhile, in a medium bowl, mix mayo, yogurt, scallions, pepper, chives, orange zest, vinegar, and hot sauce. Add cooled potatoes to the mixture and gently toss until fully coated. 

Season with salt and pepper.

Refrigerate and serve chilled.
